I remember reading the name Alice Waters thinking, “Where have I seen that name before?” Turns out I bought Salt, Fat, Acid, Heat to improve my cooking skills a while ago, and Chez Panisse was where the author (Samin Nosrat) got her start working under Waters. Funny how seemingly disparate things connect over the arc of one’s experience. This article was a great read! We often take food for granted, so we don’t think about its place as part of a cultural or ideological vernacular. I guess you could say Biltekoff’s work provides some … food for thought?
